I crave hash browns from time to time (I used to love Burger King’s and Carl’s Jr.’s hash browns) This healthier version fills the void of the beloved fast food staples.
430 g zucchini (2 small)
1/4 cup cheddar cheese
2 Tablespoon Parmesan cheese
2 Tablespoon almond flour Seasoning of choice (salt, pepper, seasoning all)
Grate zucchini in a large bowl. Add salt to zucchini to draw moisture out. Take a clean rag and drain zucchini Add egg, cheeses, almond flour, and seasonings and combined Preheat oven to 400 F Form tots by hand or use a mini muffin tin
Bake for 25 mins flipping half way through
