  • I made a batch of these. They are like crepes versus tortillas. The flexible egg texture you would expect is there but the egg taste is not. The coconut flour makes them very dry. They were very flexible and held food right after they were made and a little while after, but within an hour they began to break apart when held and would not roll up without breaking. They work for a quick fix but are not on my repeat list because of the structural integrity after one hour, the amount of egg whites needed, and the dry after taste.

  • Great video! Could you refrigerate the mixture to save for later, if you only need a few tortillas? Or would you recommend making all the tortillas and storing those instead? How long will they keep for in premix and finished tortilla forms? Thanks.

  • So happy cause I miss quesadillas! If you use a crepe pan they come out perfectly round with even thickness. OK so I'm kinda bougee I own a crepe pan. It also makes great Sunnyside eggs when my other pans are in use and egg crepes before I saw your recipe. But I digress, bless you, thank you, and keep up your very good work.😀PS if you do pumpkin pie spice, vanilla, and maybe some shredded coconut in the batter fry them up then re-warm in brown butter, add whipped cream sweetened or unsweetened w/berries…So good! So good!

  • Excellent recipe. The only thing is that when putting the amount of water to reach the same consistency as in the video, the pancakes break. I would add less water to make them thicker. Otherwise, great job!
